Single turn 10K Ohm Trimmer Potentiometers. Trimpots are perfect for testing ADC setups, setting LCD contrast, and a multitude of other applications. Leads can be straightened and inserted into a breadboard.
This skill defines how difficult the soldering is on a particular product. It might be a couple simple solder joints, or require special reflow tools.
Skill Level: Noob - Some basic soldering is required, but it is limited to a just a few pins, basic through-hole soldering, and couple (if any) polarized components. A basic soldering iron is all you should need.

Oh, and how does it work with only 2 leads? I might be missing one of them in the picture...
They have three leads. power, ground and brush (the one you read the value from)
Wait - Single turn means it doesn't rotate more than 360 degrees, right? Cause most people need to be able to adjust these a few times...

Try flattening out the legs and twisting them 90 degrees.
note that without bending/trimming the legs this one may "jump" out of a breadboard.
