These are massive single pole - single throw (SPST) sealed relays. This means that when current is applied to the coil it throws a simple changeover switch, terminating the connection from the NC contact to ground and closing the NO contact. These relays can be used to switch high voltage/high current devices.
This skill defines how difficult the soldering is on a particular product. It might be a couple simple solder joints, or require special reflow tools.
Skill Level: Noob - Some basic soldering is required, but it is limited to a just a few pins, basic through-hole soldering, and couple (if any) polarized components. A basic soldering iron is all you should need.

If it requires power, you need to know how much, what all the pins do, and how to hook it up. You may need to reference datasheets, schematics, and know the ins and outs of electronics.

Your knowledge of a datasheet will only require basic features like power requirements, pinouts, or communications type. Also, you may need a power supply that?s greater than 12V or more than 1A worth of current.

Your description needed to be updated. A SPST has no NC contact. This relay will only make a connection when the coil is energized.
You can work out the ratings by matching the the product code in the photo with the product code table in the data sheet. Not that hard.
I'm way too lazy for all of that. Just get these relays here (SPST, 30A) and here (SPDT, 20/10A).
Coil voltage might be nice to know too... If the photo is correct, then this is a 12-volt DC coil.
When you say "Sealed", do you mean water & dust resistant?
The datasheet labels them "wash tight" (versus open, vented or "dust shield, unsealed") so yes they should be dust and water resistant (not proof)
